• 3 (15 1/2 oz.) cans black-eyed peas, drained and rinsed
  • 2 (13 3/4 oz.) cans chicken broth
  • 1 lb. smoked pork sausage, sliced and browned
  • 2 c. onion, chopped
  • 1 tsp. crushed red pepper
  • 1/2 tsp. ground red pepper
  • 1 c. water
  • 2 1/2 c. instant white rice, uncooked

    Combine peas, broth, sausage, onion, water, crushed red pepper and ground red pepper in a medium saucepan. Bring mixture to a boil and add rice. Cover and simmer 10 minutes or until rice is tender.
