• 6 pounds pork
  • 4 tsp. salt
  • 1Tbsp. fennel seed
  • 1 Tbsp. crushed red pepper
  • 1 Tbsp. oregano
  • 1 Tbsp. basil
  • 3 cloves garlic, minced
  • 1 Tbsp. Paprika
  • 1/2 c. water

    Remove the pork from the bone and cut into 1 inch cubes. Combine all ingredients in a large bowl and refrigerate overnight. Grind the meat with a course blade, twice.


    To freeze the sausage: Make 1/2 cup patties and place between double layers of wax paper. You can then place them in plastic bags and freeze.
