• 12 quail
  • 1 lb. sweet butter
  • 1 pint heavy cream
  • 1 Tbsp. honey
  • salt and pepper to taste

    In a heavy iron skillet melt the butter over low heat. Add the quail and cook until butter has reduced. While cooking spoon the melted butter over the quail to ensure and even golden brown color. Once butter has reduced add the cream, salt and pepper. Continue to spoon liquid over the quail as they cook. Once quail are tender stir the honey into the liquid and baste 3 more times. Remove from heat and serve.
