- 8 doves
- 1 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. butter
- 2 Tbsp. olive oil
- 1/2 c. game stock or chicken stock
- 1/2 c. apricot nectar / juice
- 2 tsp. cornstarch
- 1 Tbsp. honey
In a medium bowl combine flour, salt and pepper. In a large skillet melt butter and oil over medium heat. Add doves to the butter and brown on all sides. Turn heat down, cover and simmer for 40 minutes. Remove doves from butter and keep warm. In a small bowl combine stock, apricot nectar and cornstarch. Add mixture to skillet and stir; deglazing pan. Add honey to mixture and simmer until sauce thickens and slightly bubbles. Pour mixture over doves and serve.
