• 8 doves
  • 1/3 c. plus 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/2 c. olive oil
  • 1 clove garlic, crushed
  • 1 c. red wine
  • water
  • 2 Tbsp. dry white wine

    Combine 1/3 cup flour, salt and pepper in a medium sized bowl. Add the doves and coat well. In a large heavy skillet heat the oil. Add the garlic and saute. Brown the doves in the oil. Discard the garlic. Add the red wine to the skillet and enough water to barely cover the doves. Simmer for 1 1/2 hours or until doves are tender. Remove the doves from the skillet. In a small bowl combine the white wine and 1 tablespoon flour. Add mixture to skillet and stir until thickened. Pour mixture over doves and serve.
